Ginger Bread

Here’s a great recipe that has proved a hit with all who have tried it!

gingerbread

2 cups plain flour

1 cup dark muscavado sugar, or soft brown sugar

1 tsp baking soda

1 tsp baking powder

2 Tbsp ground ginger

1 tsp mixed spice

1 tsp nutmeg

1 tsp cinnamon

1 cup golden syrup

225 g chopped butter

2 lightly beaten eggs

250 ml milk

1. Heat oven to 150 C.

2. Grease and line a large loaf tin.

3. Sieve together the dry ingredients.

4. Heat the butter and golden syrup together in a saucepan.

5. Add the melted butter and golden syrup to the dry ingredients. Mix until combined.

6. Mix the milk and eggs together. Add to the rest of the ingredients. Mix until combined.

7. Pour the batter into the loaf tin.

8. Bake at 150 C for 45 minutes, or until a skewer comes out clean.

9. Allow the loaf to rest for 20 minutes before turning out to cool.

Variation: You could cook this recipe in muffin tins with a nice piece of poached pear on top! Delicious served with a bit of runny custard.
